Mancera calls it 'an olfactory affogato', and the image fits: espresso poured over vanilla ice cream. Coffee and amaretto, an almond liqueur, lead at the start. The heart turns milky with vanilla ice cream and speculoos, the spiced Belgian biscuit. Brown sugar, vanilla and ambergris form a sweet, rounded base where the coffee gradually recedes.
